So if you want to make hunger/thirst more managable, use the console and the creative menu. It's also part of how you heal, without the food/water you have no hp regen and would have to resort to farming more bandages and med kits, you'd be trading one set of farming for another. The big drawback for turning them off completly is that food/water is tied into how you gain health/wellness which is your hit points and stamina, so without them you could not gain hp or stamina. You can also use the creative menu to just spawn the food/water as you need it rather than hunting for it. With that on you can use the console commands to give yourself maxed skill in "the survivor" and "the camel" it makes hunger and thirst not build up very fast, a meal and some tea will last pretty much an entire day. Turn on cheat mode when you start the game, it's under modded options.

But if you play single player you can work around it pretty easily.
